Oven Kalua Pork

Ingredients
4 lb pork butt
1 tablespoon garlic powder
2 tablespoons Hawaiian salt
1 bottle (3.5 oz) liquid smoke
1 lb pork skin
5 1/2 cups water
8 ti leaves Instructions
Make several deep slashes around pork butt. Rub garlic powder and 1 tablespoon of the Hawaiian salt on pork. Pour liquid smoke over pork. Remove and discard most fat from pork skin. Add 1 1/2 cups of the water to a roasting pan, then line with foil. Lay 4 of the ti leaves on the foil. Place pork and skin on leaves. Cover with the remaining 4 ti leaves. Cover tightly with foil. Roast at 400 F in electric oven for 1 hour. Lower temperature to 375 F; cook for 4 1/2 more hours or until pork is easy to shred. In a large saucepot, bring the remaining 4 cups water to a boil. Add the remaining 1 tablespoon Hawaiian salt. Shred pork and cut skin; add to boiling water. Cover and cook for 15 minutes. Makes 8 servings. Show Info

The recipe we use says to either put in banana leaves or if they aren't available two whole bananas which you discard after cooking. Not sure it adds any flavor since liquid smoke is kind of overpowering.
I wrap mine in cabbage leaves and then tighly in foil and then cook in a dutch oven. I also cut way back on the liquid smoke because like you said, it can be pretty strong. For the 5 1/4 pound roast I made yesterday I used less than 3 ounces of liquid hickory smoke. I also keep adding water to the dutch oven throughout the entire cooking process. And I don't use the pork skin that this recipe calls for. So actually I deviate from the recipe quite a bit. I cooked at 400F for an hour (or maybe it was 425F, oops) and then lowered to 375F for 2 hours, then realized I also needed to get a pie in the oven so brought up to 425F for about an hour (15 minutes to get up to temperature and then 45 minutes to bake the pie), then back down to 375F for 2 hours 45 minutes. So total of 6 1/2 hours. Then shredded and boiled for 15 minutes or so. It made enough for 5 hungry people with left overs for maybe 3 sandwiches.
